They're one of the more versatile mushrooms and can be eaten raw on salads (sliced thin), but also hold up to baking or putting in soups. A less traditional approach is marinating them in olive oil (few minutes or so).
Aside from their vast cooking versatility, mushroom popularity can also be attributed to their potential cancer-battling benefits. Criminis are a great source for naturally occurring CLA (conjugated linoleic acid) and EGT (ergothioneine) – which are both linked to reducing inflammation and decreasing cancer cell growth.
Store in a paper bag in the fridge and they'll last about a week at top shape. After that they'll dry up a bit, but still work for soups and baking for another couple weeks.
