Yacon is an Andean root. It's similar to Jicama, but slightly sweeter and floral undertones, and also like a sweet potato but tastes more like an apple. Most commonly enjoyed raw, it can also be put in currys or stews. Shave it up and put it a salad or Kohlrabi if it's available!
